Have you had a Bruxie? I am head over heals in love with this mighty fine establishment. The waffles at Bruxie, in Old Town Orange by Chapman University, are weightless and crispy yet tender. These waffles aren’t the typical American style but rather a Brussels style waffle. They are made from a proprietary yeast-leavened batter which took years to perfect. The waffle batter recipe is under tight lock and key. I must admit the culinary team of Dean Simon and Philippe Caupain, Chief Wafflers, and Kelly Mullarney, Waffle Innovator, are on to something; quick delicious gourmet waffle sandwiches. Sandwiches are created from fresh, seasonal, and unique ingredients. The usage of these fantastic waffles as a substitute for bread gives these sandwich perfect balance. The menu offers both sweet and savory options, Each waffle is about $4.50 – $7.50.

A few of their current special are their seasonal shakes which are made with old-fashioned Wisconsin custard. This month there is a delish Fresh California Strawberry Shake.

Try a Strawberry Shake without the chocolate. It is very large and very good.
Another home run special this week is the short ribs. A Braised Beef Short Ribs Bruxie consists of caramelized onions, crispy blue cheese potatoes, horseradish & chives. It is perfect for clearing out those sinuses. They will also be offering a Roasted Wild Mushroom with Goat Cheese, Arugula with a Balsamic Vinegar Reduction. Two Please.
Now to the Sweet Special. Oh.my.goodness, they have a Crème Brule Bruxie; pastry cream topped with caramelized sugar, locking in this seasons finest strawberries. (Just wiped a tear)
Below are a few of the regular menu items; Chicken and Waffles, a Liege Waffle (a thicker bread like waffle), and S’mores Waffle. The standard Brussels Waffle, my personal favorite, delicate with just the right crispiness, comes with cinnamon or powdered sugar, and finally Fresh Berries (Blackberries last week) and Lemon Cream.
I hope you get a chance to stop on by and try a Bruxie Bold Fold. There really is something delicious for everyone. One final note. Orange Parking Enforcement loves hanging out at Bruxie too. They do like to ticket. Be mindful of the signs around the neighborhood since many streets require permits. GOOD news is last Friday the City of Orange changed the parking restrictions on the street adjacent to Bruxie. Upward of 40 new unrestricted (no permit required) parking spaces just became available.
