Sweet Garlic Soup

The first time I tasted this Sweet Garlic Soup, I knew I could never live without it. The name, yes, is very interesting, sweet and garlic combined? But, it is so incredibly good. I dream about making vats of it daily to feed the world.

Where did this recipe come from?  I am proud to say:

The owner of Totally Haute, Suzi Holte shared this concoction one day over lunch. She then produced a fantastic old world French Cookbook, Roger Verge’s Entertaining in the French Style, to show me how easy it was to make. My eyes became as large as walnuts. It was simple to create and delivers 5 star restaurant quality taste. It would be a top seller.

Suzi is my hero. Easy food that tastes 5 stars, she is the master of it. Her new business here in Orange County does just that. She is your sous chef and prepares everything for you, then delivers your prepared meal in a beautiful kit you assemble at your convenience. You are going to need fresh garlic, lots of it.

Peel, then smash 4 whole heads of garlic to release all those naked cloves. Don’t be turned off now.  Due to the two boiled garlic soakings, the heavy garlic wallop is dissipated to create a fine tuned flavor.

Unwrap your flavoring, so simple with cubed bouillon. Not kidding. I use Wyler’s Chicken Bouillon Cubes.

Let them get to know one another.

Then finally, the magic to the creamy consistency of the soup, without going overboard on the cream, is white Weber’s bread. Crusts, removed please.

Garnish with fresh chives and add a few toasted pieces of bread. Soup nirvana. This would be a last meal, if I had any say in the matter.

Sweet Garlic Soup

Ingredients
  • 6 slices of white Weber's bread
  • 4 whole heads of fresh garlic
  • 4 chicken bouillon cubes (Wyler's Chicken Bouillon Cubes)
  • 1¼ cups heavy cream
  • 2 tablespoons unsalted butter
  • Kosher salt to taste
Instructions
  1. The soup should be prepared just before serving. Start making it about 45 minutes before sitting down to eat.
  2. Trim off the crusts from the bread slices and set bread aside.
  3. Separate and peal 4 heads of garlic. Half fill a large saucepan with water, add the garlic and bring to a boil. Once the water has reached a boil, pour off the water. Refill the sauce pan with water and bring to a boil again. Then drain off the boiling water again.
  4. Return the garlic to the saucepan, along with 3½ cups water and the bouillon cubes, Place over low heat and simmer until the garlic begins to soften. 7 to 8 minutes. Add the bread and bring to a boil. Stir in heavy cream and let the soup return to a boil. Drop in butter.
  5. Transfer the soup to a blender or food processor to process until smooth. Return to the pot to season to taste and serve hot with garnish, if desired.

    You are going to love it! I used a soup boat motor, (hand held blender) to smooth the soup. So much easier than transfering to a Food Processor or Blender. Good Luck and let me know how it turns out.
