The kitchen smells unbelievably good.
McGyver Maddox has not been able to leave my side.
Since Chocolate is a no-no for dawgs.
This big guy is playing the pathetically neglected role tonight.
These treats McGyver Maddox loves but cannot have,
Chocolate Chunk Cookies.
SO ONWARD…
Let’s bake some cookies! You know you want to.
It’s not complicated, I’ll hold your hand.
The Cast of Characters:
Butter, Brown Sugar, Sugar, Eggs, Vanilla, Flour, Baking Soda, Salt
& Very Very Good Chocolate
Eggs and unsalted butter need to be room temperature
Put the Flour, Salt and Baking Soda in a separate bowl
I also put the white sugar and (firmly packed) brown sugar,
(I really pack it in there, pack it like you mean it) in another bowl
Okay, let get to business.
Place the unsalted butter in the bowl.
Then add the packed brown and white sugar
I cream all three – butter, white and brown sugar, until fluffy.
Mixey Mixey.
Then crack the eggs
Mix this all together real nice-nice.
Next comes the vanilla, this stuff is magical. I use a heaping teaspoon.
::meaning 1.5 tsp /2 tsp when is calls for 1 tsp::
this is always a good rule of thumb – try it with pancake mix.
Now, in two or three batches,
add the dry ingredients, mixing well after each addition
until just combined.
THEN STOP AND MIX NO MORE.
More mixing will make your cookies tough.
Tough is good in a cardio-sculpt class
NOT so good when baking with flour.
And now, here come the terms
On to that Very Very Good Chocolate.
The higher the cacao the better, this Swiss 72% is mighty fine.
Shiney like a UFO, I can almost see my reflection,
Channeling – Close Encouters of The Third Kind.
So delicate, it is almost too beautiful to pulverize into 1/2″ pieces with a sharp knife.
Look away if this is too disturbing, but for these cookies it is necessary.
Set these pieces aside and try not to snack (disclosure for death by chocolate)

add the pieces to the dough, gently now – gently, fold it all together.
Like you are folding your delicates – thats right.
Good job – you can do this!
Then, using a cookie scoop or two teaspoons,
place cookie dough in small rounds on an ungreased cookie sheets.
Now bake the cookies in a 375 degree oven for about 11-12 minutes.
You don’t want them to be overly brown,
but if they’re too underbaked they’ll be overly gooey.
Straight out of the oven — blissfully happy.
Try to keep your followers away.

Here is the Recipe:
McGyver Maddox Chocolate Chunk Cookies
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 bars (each 3.5-oz.) Semi-Sweet Chocolate – Trader Joes 72% Swiss Chocolate will do.
Directions
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chunks. Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 11 to 13 minutes.
