Strawberry Pie

What to do with all these Strawberries of late?  Jam, Ice Cream Sundaes, in Spinach Salads and even infuse Vodka (recipe HERE).  It is all delectable.

However, here at Basecamp, Strawberry Pie is a favorite.  If you would like to make one, it’s easy, just gather the following ingredients.

Strawberry Pie:

1/4 cup cornstarch

1 1/2 cup sugar

1 1/2 cup water

1 (3oz) package of strawberry gelatin

1 quart fresh whole Strawberries

1 9 inch baked pie shell

Here we go:

Wash and cut off the tops of your recently purchased berries. Set them aside.

In a medium saucepan combine water, sugar and cornstarch.

Cook over very low hear, stirring until the mixture is clear.

It takes about 5 minutes  Then remove the pan from the heat.

Now mix in some strawberry gelatin.

Stir until everything is blended nice-nice. Let the mixture cool.

Here is the next step. You can take two different directions with the pie crust. One, buy a premade Trader Joe’s pie crust and use BOTH sheets to bake a thick hearty crust.  Or two, use this dough recipe HERE in a 9” pic dish and not an 11 inch tart pan.  Either way, just remember to weight your pie crust down and cover the edges with foil if they begin to darken to quickly while baking.

Onward, after your baked crust has cooled.

Load it up with your strawberries.

And pour the sweet red sauce over it. Chill for 4 hours or so, if you can wait that long.

Then serve your little piece of heaven with whipped cream or plain. The choice is yours.  Hope you like it!
