Recipe type: Adapted from Ree Drummond's Favorite Burger Recipe
Ingredients
2 pounds Ground Beef (80/20 is very nice)
1 teaspoon Salt
1 teaspoons Black Pepper
1 tsp. Tabasco Sauce, or more if you likee hoties totsie
2 Tablespoons Unsalted Butter
2 Tablespoons Olive Oil
1 large or two small Maui Onions, Sliced
3 Tablespoons Brown Sugar
¼ cups Real Mayonnaise
Kaiser Rolls
1 cup Maytag Blue Cheese

Instructions
Place the ground beef into a medium mixing bowl. Add salt and ground black pepper. With your hands, mix the meat. Maybe take your wedding ring off first.
Caramelized Onions: Heat your pan over medium low heat. Add butter and olive oil. Dump in the sliced onions. Let them go for a bit, then add 3 ‘fat’ tablespoons of dark brown sugar. Allow the onions to caramelize over low heat for about twenty minutes, tossing occasionally. Then turn that heat off. Burning caramelized onions is sacrilege.
Spicy aioli: Place ¼ cup mayonnaise into a small bowl and add Tabasco. Test for taste.
Next, your fancy rolls, cut them in half and spread each half with butter. Place them face down on a grill pan over medium heat. Lightly grill. Set aside.
Form the meat into patties and place on the grill. Allow each to cook about 3 minutes. Then flip and cook until done.
Spread your aioli on those fancy rolls and transfer the burger to the bottom half of the bun. To plate your cooked burger, add lots of blue cheese and a heaping amount of caramelized onions. Top with a handful of greens and top with the bun.
