The soup should be prepared just before serving. Start making it about 45 minutes before sitting down to eat.
Trim off the crusts from the bread slices and set bread aside.
Separate and peal 4 heads of garlic. Half fill a large saucepan with water, add the garlic and bring to a boil. Once the water has reached a boil, pour off the water. Refill the sauce pan with water and bring to a boil again. Then drain off the boiling water again.
Return the garlic to the saucepan, along with 3½ cups water and the bouillon cubes, Place over low heat and simmer until the garlic begins to soften. 7 to 8 minutes. Add the bread and bring to a boil. Stir in heavy cream and let the soup return to a boil. Drop in butter.
Transfer the soup to a blender or food processor to process until smooth. Return to the pot to season to taste and serve hot with garnish, if desired.
