  • 5 large eggs (Beat eggs with ¼ teaspoon salt)
  • 1 tbsp butter
  • 4 oz pancetta diced
  • 2 cup sliced mushrooms
  • 1 garlic clove, minced
  • 4 oz crumbled feta
  • ¼ cup diced chives
Instructions
  1. Heat a 10-inch heavy nonstick skillet over medium-high heat. Add pancetta, drain off excess grease then sauté mushrooms and minced garlic until browned and tender, 3 minutes. Remove mixture from the pan and set aside.
  2. Add butter to the pan. After the butter has melted, pour in the eggs. Cook, lifting edges to let uncooked egg run underneath and shaking skillet occasionally to loosen omelet, until almost set. Add the Feta cheese and pancetta-mushroom mixture. Fold and slide out onto a large plate. Sprinkle with Feta and chives.
